Born in the suburbs of Chicago to a large Italian-American family, Chef Marc’s passion for the culinary arts started at a young age in his family kitchen.
After being trained at the Kendall Culinary School and completing an internship with Royal Caribbean Cruise Line, Chef Marc began his career in Chicago work for Marriott International and Parkers Ocean Grill.
Several years later, he became the Sous Chef for Anderson Japanese Gardens. This is where he began to experiment with fusion-style cooking.
Chef Marc’s love and compassion for food continued to drive his ambition for culinary success and he was eventually promoted to Executive Chef of the Century Center, where he has turned the tables with his effective food cost management and perfecting serving exquisite cuisine to the masses!
